For us here in Las Vegas, the Summer is quickly approaching. We enjoyed 90 degree weather yesterday afternoon. Well – I guess as much as you can enjoy 90 degree hot desert sun!! I know many of my family and friends back east are still eager for the nicer weather to make its appearance! Either way, Summer is coming and with the Summer, we all look for nice refreshing dishes to enjoy!
One of my favorite foods to enjoy during the summer is fruit. I absolutely love the Summer fruits – cantaloupe, plums, nectarines, peaches, grapes, strawberries. You name it. It’s especially delicious on the grill – but that’s another blog post. I know fruit is sweet on its own, but I like to kick it up a bit and serve it with a light and delicious creamy fruit dip. This dip is so light and has just a touch of lemon which complements the sweetness of fruit perfectly! I just love it!!
Lemon Fruit Dip
2 cups sugar
2/3 cup cornstarch
1 cup cold water
4 eggs, beaten
2/3 cup lemon juice
2 tsp. vanilla extract
1 16 oz. cool whip
1) In large heavy saucepan, combine the sugar and cornstarch. Gradually whisk in water until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat, cook and stir 2 minutes longer. Remove from heat.
2) Stir a small amount of hot mixture into eggs to temper. Return entire mixture to the pan stirring constantly. Bring to a gentle boil, cook and stir 2 minutes longer. Remove from heat. Gently stir in lemon juice and vanilla.
3) Transfer to a bowl. Cool to room temperature without stirring. Cover surface of mixture with plastic wrap. Refrigerate until cooled completely. (Preferably overnight.)
4) Fold in cool whip.
5) Serve with fresh fruit.
