So, a few months ago Rob and I went to Sammy’s Woodfire Pizza. We went in support of a fund raising event for our church. It was a restaurant we had never been to and truthfully, it never really appealed to us to want to go and try it out. But in support of our church’s fundraiser (and the fact that I coordinated the event as the Fundraising Co-Chair of the Church), we kinda had to go!
We were both pleasantly surprised. I had never seen such interesting combinations for pizza before. One that caught my eye right away was their Pear and Prosciutto Pizza. Oh my goodness – it was amazing! Thinly sliced pear, with slices of prosciutto, and topped with arugula and drizzled with a balsamic vinaigrette. Are you drooling yet? It was amazing and of course I had to try it at home!
I decided instead of a traditional bread crust to do something a little different. I had heard through all the “low-carb diet crazes” about making a pizza crust out of cauliflower. I decided to give it a try and it turned out to be really delicious. Even my husband liked it – and he HATES cauliflower!
Armed with a good pizza stone, I made my amazing pizza crust and topped it with thinly sliced pears and some slices of prosciutto. After it cooked I topped it off with a combination of fresh arugula and spinach and some halved grape tomatoes. I whipped up a quick balsamic vinaigrette and drizzled it on top. The combination of flavors was amazing. The creaminess and crispness of the cauliflower and cheese combination after it cooked along with the saltiness of the prosciutto, the sweetness of the pears, and the tartness of the balsamic drizzle was an explosion of flavor with each bite! The arugula added a little bite with its peppery flavor, some added sweetness from the grape tomatoes made this just an amazing pizza. Something a little different and a bit more sophisticated than your traditional pizza, but absolutely delicious!
Cauliflower Pizza Crust with Arugula & Balsamic Drizzle
2 1/2 cups grated cauliflower
1 egg beaten
1 cup mozzarella cheese
2 Tbsp grated Parmesan cheese
Non stick spray
1 pear, thinly sliced
4-5 slices prosciutto
1 cup fresh arugula
1 cup fresh baby spinach
1/2 cup halved grape tomatoes
Balsamic Dressing (see below or use a pre-made dressing found in your local supermarket)
1) Line a rimmed baking sheet with parchment paper and preheat oven to 425 degrees F. (Or use a well seasoned pizza stone.)
2) Grate the cauliflower using a box grater until you have two cups of cauliflower crumbles. Place in a large bowl and microwave 7-8 minutes or until soft. Remove from microwave and allow to cool.
3) In a separate bowl combine the egg, mozzarella cheese, parmesan cheese, salt and pepper. Add the cauliflower and mix well.
4) Pat into a 10″ round on the prepared pizza pan or pizza stone. Bake for 10-15 minutes. Remove from oven. Place sliced pears and prosciutto on the hot crust. Top with arugula, spinach, tomatoes, and drizzle with balsamic vinaigrette.
Truthfully I just kinda wing this. I combine roughly 1/4 cup balsamic vinegar with salt, pepper, garlic powder, onion powder, and dried basil. While whisking, slowly drizzle some olive oil into the mixture until it becomes the consistency of a vinaigrette dressing. Add more or less seasoning as desired. Drizzle over the pizza and enjoy!!
